SYRIAN RED BEAN SOUP

INGREDIENTS

1 tin kidney beans

1 red onion

1 clove garlic

1 large red potato

1 large carrot

1 red capsicum

1 tin diced tomator or 2 – 3 fresh tomatoes

1 litre vegie stock

Half a lemon

Half teaspoon cumin

Half teaspoon coriander

Half teaspoon paprika

Half teaspoon cinnamon


Method

Fry chopped onion, garlic and capsicum in olive oil until soft. Add spices and fry until fragrant. Add kidney beans and stir to coat with spices. Add stock and tomato and bring to boil. Add carrot, potato and juice from half a lemon and cook until vegies are tender. (If a spicier soup is desired add chilli flakes or cayenne pepper).

Serve with a spoonful of yogurt and chopped fresh mint if desired.

NB: This is a recipe that I created from combining two different recipes and I have only made it in a much larger quantity. You may need to adjust amounts of spices stock etc. I think the above should serve 4 – 6 people.
